  • 1/4 cup coconut flour
  • 1/3 cup tapioca flour
  • 1/2 cup almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 4 large eggs
  • 1/4 cup almond milk

  • 1 tsp vanilla extract
  • 1/4 tsp nutmeg
  • ghee butter or coconut oil to coat skillet
  1. Mix the coconut flour, tapioca flour, almond flour, baking soda, nutmeg and salt in a small bowl.

  2. In a larger bowl whisk together the eggs, almond milk, coconut oil and vanilla extract.

  4. Heat the ghee, butter or coconut oil in a griddle.

  5. Add the batter to the hot griddle, and flip the pancake after about 1 minute. The pancakes will not bubble like you might be used to so keep an eye on them and make sure they don't burn.
