Paleo Gluten Free Blueberry Muffins Recipe
When you are looking for a quick Paleo snack this is just the answer.
These blueberry muffins are delicious and easy to bake.
They require just a few ingredients and are fabulous served warm.
If you make extras they can be stored in the refrigerator and will still taste great.
- 6 eggs
- 1/2 cup coconut flour
- 1/4 cup tapioca flour
- 1/2 tsp baking soda
- 1/4 cup maple syrup
- 1/2 cup melted coconut oil
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 1 cup fresh blueberries
Preheat oven to 350F.
Place 12 cupcake wrappers in a muffin tin.
In a large bowl mix together the eggs, melted coconut oil, maple syrup, and vanilla extract.
Sift in the coconut flour and tapioca flour. Add the sea salt and baking soda. Mix thoroughly.
Fold the blueberries into the mixture, being careful not to break them.
Fill the cupcake wrappers evenly with the batter.
Bake for about 35 minutes or when a toothpick inserted into the deepest part of the muffins comes out clean.
